We're Loving...

:: this braided cinnamon bread.  If you find yourself with both the time and the patience, it's a fun one to do with the kids, too.

::  this salad with the works.  And this no-knead bread (served with it) was gone so fast it barely made it to the table.

:: these lime chicken fajitas with this mango pico de gallo.   With the latter, go for a double batch.

:: this banana bread made dairy-free with a few substitutions (oil, soured almond milk).   We reduced the sugar by 2/3 cup and added 2/3 cup dark chocolate chips.  Amazing.

:: the public library, as we always do.  Lately some of our favorite reads include Interrupting Chicken, Duck! Rabbit!, Chicken Big, and Press Here.

We're gearing up for the end of our Holy Week observances, then Easter, as well as three birthdays in five days!  There is a lot to celebrate this week and much to be grateful for.

  1. I might have to try making the banana bread. Substituting chocolate for sugar is brilliant! I LOVE the public library. M's had his own card since he was 2. Haven't checked out the other books you listed, but Press Here is a major favorite at our house. Hope you're enjoying the week. Happy Easter!!!
